The national dish. Despite it familiarity, Pad Thai emerged only as recently as the mid 20th century. Facing a rice shortage, Prime Minister Plaek Phibunsongkhram wanted to develop a national dish using local, natural, ingredients and promote a strong national identity at the same time. The result was Pad Thai.
